Simple Avocado Egg Toast


Breakfast doesn't always have to be boring. This is a great example of how to take some simple toast and dress it up. Avocado toast has become such a huge trend in breakfast/brunch food. This is my little spin on it with the best ever scrambled eggs you've had. 


Now good toast starts with good bread. Dave's Killer Bread is the bomb! Every flavor option they have is amazing. We don't eat bread that often so we store it in the freezer and it lasts for ever in there. The Good Seed here is one of our favorites! So take you a piece of this awesome bread and pop it in a toaster and toast it to how you like it. I like my toast just on the verge of burnt. 


Then take your toast and spread half of a ripe avocado on there. You can do slices of avocado if you'd like but I like to spread mine. 


Now for the eggs. Crack three eggs in a bowl, it is best to have your eggs at room temperature prior to cooking them, then whisk til they are scrambled and creamy. Then to your eggs add two tablespoons of whole milk. You can use any milk you have or even half and half or heavy cream. I happened to have whole milk in the fridge this day and that is what I used. On low heat pour your eggs into a non stick skillet, with one teaspoon of avocado or olive oil in and cook on low stirring occasionally. Add salt and pepper to your eggs to taste. Then add one pad of butter (about 1/2 tablespoon) to your eggs and stir in as it melts. 



Once your eggs are almost cooked (about 10 minutes on low) you can add in any flavorings you like. I added green onions to these. Gently folding in the green onions just before I turned the heat off. Once your eggs are done they should have such a creamy and fluffy consistency. Spoon the eggs onto your piece of toast and top with Maldon Sea Salt. This will make 3 pieces of toast.

Simple Avocado Egg Toast 

3 1/2 Avocados 
3 Eggs
3 Slices of Dave's Bread
1 tsp Avocado Oil 
1/2 Tbls Butter
2 Tbls Whole Milk 
3 Tbls Chopped Green Onions 
Salt and Pepper to taste 
Moldan Sea Salt 

In a bowl whisk together the eggs and milk. Then add the avocado oil to the non stick skillet and set heat to low. Add the egg mixture to the pan and cook on low for 10 minutes stirring occasionally. When eggs are just slightly runny add the butter to the eggs and salt and pepper to taste. Just before turning the heat off add the green onions and fold them in gently. Toast your bread and spread half an avocado per piece of toast. Top the avocado with the eggs and then sprinkle on some Moldan salt for flavor. Enjoy!
