Not your average Lima Beans

 






Lima Beans, Butter Beans, what ever you call them I love them. They are such a versatile bean like pinto beans. I love them plain or spiced up with seasonings and flavor! 





This batch of beans had a lot of flavor in it. I have a different recipe with just bacon and green onions and it is so good but that is for another time. This recipe started off with half a pound of fresh uncured bacon from our local Farmers Market. I cut the slices into lardons and proceeded to render the fat out and make them crispy. Once they were crispy I took them out and placed them in a bowl with a paper towel. Then I diced an onion up in a large dice and placed it into the bacon fat in the pan. 




I then sauted the onions till they were translucent. I sliced 3 small red bell peppers and threw them in with the onions. I seasoned this with salt, pepper, Aw Shit seasoning and smoked paprika. I let this cook till the peppers were tinder. 



Now side note on the Aw Shit seasoning. If you have not tried it you need to! It is from Big Cock Ranch and they have an amazing line of spices! Aw Shit is like a Cajun seasoning nice and spicy! Once the seasonings became fragrant I took the Lima beans and put them in the the sauted mixture. Let that cook for about 10 minutes before adding water. 



After 10 minutes go ahead and add water to cover the beans. Cover and cook for 30 minutes stirring occasionally. 


These beans will take about 3 hours to cook. You will need to add water a couple times during the cooking process. Just make sure to add water when you can see the beans. If you like soupier beans you can keep adding water if you like thicker beans don't add as much. 

These beans go good with Pork, Beef, or Chicken. Anything grilled or smoked. Just a good option for something other than pinto or baked beans. Enjoy! 


Not your average Lima Beans 

1 lb of Lima Beans 
1/2 lb of Bacon cut into Lardons
1 large Yellow Onion diced
3 small Red Bell Peppers 
2 TBLS Aw Shit seasoning 
1 TBLS Smoke Paprika
2 tsp Salt
3 tsp Black Pepper 


Render the fat out of your bacon and cook till crispy. Then dice your onion and put in the leftover bacon drippings. Cook till translucent then add the red bell pepper and spices. Cook this mixture for about 10 minutes. Add the Lima Beans and cook again for another 10 minutes. Add water to cover beans, cook for 30 minutes and then add more water. Stir occasionally. Enjoy!
