Chorizo con Papas y Huevos
Chorizo con Papas is one of my favorite breakfast tacos but add some huevos in and you have one of the best combinations out there.
This is easy to make with store bought chorizo. Make sure when looking for chorizo that it does not have a lot of fat chunks in it. You won't like those chunks of fat.
To start get you two small russet potatoes and microwave them for about 5 minutes or until they are not firm but not quite like a baked potato. Dice that potato up into the size you like your home fries.
Brown your chorizo. Do not throw out that grease left in the pan! It is the best thing and we are going to fry the potatoes in it!! Make sure you heat that leftover grease on a medium high heat. Throw your papas in!
Your papas will soak up that flavorful grease and take on the chorizo flavor! Cook these for about 20 minutes on medium high heat till they get nice and crispy around the edges. Throw you chorizo back in when you get the crispiness you like!
Once the chorizo is heated all the way through move all of this mixture to one side of the pan. Crack six eggs and pour them into the skillet on the side without your chorizo and papas.
Cook the eggs stirring occasionally until they are scrambled and cooked to your liking. Then mix it all together.
Get your tortillas ready. I like corn with my chorizo. These corn tortillas are my favorite. Heat the tortilla in the microwave for 45 second and it's perfect!
Top this with your favorite salsa and enjoy!
